White Tea, In Focus

What Are Golden and Silver Tips?

Origin: Both teas come from the handpicked, unopened tender buds of the Camellia sinensis plant.

Silver Tips: These buds are dried quickly with machines or fans to prevent oxidation, which keeps their silver-white colour.

Golden Tips: These buds dry slowly in the warm mountain sun. The longer sun-drying process causes mild oxidation, turning the buds a rich golden colour and creating a slightly deeper flavour with honey or fruity notes.

Both varieties undergo very little processing and offer the light, delicate qualities and health benefits of traditional white tea.

Flavour Profiles

Silver Tips: Light, airy, and exceptionally clean. Expect delicate notes of fresh grass, cucumber, and subtle floral undertones, finishing with a crisp, refreshing sweetness.

Golden Tips: Richer, smoother, and naturally sweeter. Because the buds undergo mild sun-oxidation, they develop distinct notes of wild honey, stone fruit (like apricot), and a warm, malty undertone.

How to Properly Steep White Tea Tips

White tea buds are incredibly delicate. Using boiling water or steeping them for too long will scorch the leaves and create a bitter, astringent cup.

  • Water Temperature: Use water cooled to 170°F to 180°F (75°C to 82°C). Never use boiling water.
  • Tea Quantity: Use 2 to 3 grams of tea buds (roughly 1 to 2 tablespoons, as buds are very light and fluffy) for every 8 ounces of water.
  • Steeping Time: Steep for 3 to 5 minutes.
  • Multiple Infusions: Do not throw the buds away after one cup! High-quality tips can be steeped 3 to 4 times, with each infusion revealing slightly different flavour notes. Increase the steeping time by 1 minute for each subsequent brew.

Black Tea, Brewed Right

The Best Way to Brew Pure Ceylon Black Tea

Unlike white tea, Ceylon black tea is fully oxidised and can happily take boiling water — here's the simple four-step method for a proper cup.
